Franco Console - Omar’s  Restaurant

After Graduating High school from North Medford in 2002 Franco Console started his culinary venture at Western Culinary Institute. After graduating in 2004, he interned at the Ashland Springs Hotel and was offered a position as line cook. Franco accepted the job and through the years found himself working his way up the ladder into a banquette chef/kitchen manager position. In 2006, he was sought out by two restaurant owners looking for an Executive Chef of a fine dining restaurant 38 On Central opening in Medford Oregon. Working with the staff and owners of 38 on Central, he helped to successfully open the doors and was part of receiving “the best new restaurant award” in Medford from the local Sneak Preview. After a year and half of working at 38 On Central, Franco found a great opportunity to expand his knowledge of food by working for Chef James Williams at Omar’s in Ashland. Franco then returned back at the Ashland Springs Hotel working for Executive Chef Damon Jones as kitchen manager, where he worked with local organic products on a daily basis in a culinary challenging, creative environment. Currently Franco is now back at Omar’s, Ashland’s landmark restaurant since 1946 working for Chef James Williams.
